About The Tea
Katagi-Kokaen

Tokujo Sencha
Asatsuyu
(Morning Dew)

Suberb green tea. This tea has a slightly orange yellow tint to it when it is served. It is a characteristic of Katagi-Kokaen Sencha. It's leaves are a deep hunter green and needle like. It has a wonderful light, clean, grassy taste.

Boil water, then cool down to 70 degrees. Use a smaller teapot. Pour two tablespoons of leaves and then pour hot water. Steep awhile then serve.
Do not leave water in the tea, so you can re-infuse again.

Jo Sencha
Karigane
(Song of Geese)

This is a Kuki Sencha (features twigs & leaves). Slightly lighter and sweeter than Tokujo Sencha.

Prepare in the same way as Tokujo Sencha.

Edible Green Tea
Yes. Edible!! It is powdered sencha, slightly more coarse than ceremonial Matcha. If you are a green tea lover, you'll enjoy this. When you add this nutritious edible green tea, rich in anti-oxidants, to your food or drinks it will both fortify its benefits for the body as well as enhance the taste and flavor.

You can sprinkle one teaspoon over yogurt, milk, shakes or as a furikake (condiment) on rice, yakisoba (pan fried noodles), or even spaghetti. As a tea, scoop 1/2 a teaspoon into a cup, pour slightly cooled down (about 80 degrees)
hot water and serve.

Matcha
Organic powdered Ceremonial Green Tea. Katagi-Kokaen has succeeded to produce an organic Matcha against all odds. One of the rarest Matchas in Japan. Especially rich in Vitamins A, C, and E, all in their natural state.

Boil water, then cool down to a low temperature of 60 degrees. Scoop one teaspoon of Matcha into a cup or bowl with an opening of from 4" ~ 8". Pour from a 1/4 ~ 1/2 cup of hot water, depending on desired strength, then stir with a bamboo whisk til the matcha is dissolved and flowers of bubbles start to appear on the surface, and serve.

Soba Sencha plus Matcha
Dattan Soba (buckwheats originated in Central Asia) contain a very high nutritional value. They are roasted and further blended with Sencha and Matcha to produce this Soba Cha. Katagi-Kokaen is proud to present this very healthy and aromatic mix.

Boil water. Cool it down for one minute. Scoop one tablespoon into a medium size pot. Pour the hot water and serve.

Tokujo Hoji Cha
Hoji Cha is left over buds after the first harvest in May blended with matured leaves (called in Japan, Oyako Bancha) which are then roasted. It has a distinctive nutty and cleansing aroma to it. Very popular.

Pour hot water and steep for a few minutes, then serve.

Tokujo Genmai Cha
Oyako Bancha harvested in June and blended with roasted Omi Mai (Omi rice) in equal measures. Has a wonderful aroma. Very popular in restaurants and easy to drink.

Easy to prepare as well. Just pour hot water, steep for a minute and serve.

Annapurna Farm
Annapurna Farm Sencha
I call this tea, Shizen Cha (Natural Tea). It contains deep green shade leaves with occasional sticks. When it is prepared - my favorite way - with a lower temperature (around 70 degrees) hot water, it tastes best. You feel like you are laying down in a clear shallow lake, surrounded by green leaves, as you become one with the green.
Murata-en
Ban Noh Cha
Wellness Tea. A blend of many different Japanese folk medicine teas (Minkan Yakuyo Cha). Murata-en offers this wonderful Ban Noh Cha full of flavors with passion for its many beneficial properties. Hot or cold, young or old can enjoy all year round as a daily cleansing tea. Re-infusable and easy to serve.

For a small tea pot, I would suggest 2 table spoons. Just pour hot water and serve. If you like a stronger taste, in a clay or glass cooking pot, prepare in a ratio of one table spoon per cup of water, heat at a low temperature for 5-6 minutes, then serve.
